I am a Sparkle girl!
Love me some sparkle for sure.

Tuesday Tune In: Fun. (We are Young ft.Janelle MonĂ¡e)

I can't recall when I came across Fun..
It could have been before Glee....or from Glee.
I am so happy that television shows are paying more attention to the music they play.
They are choosing songs and artists that are new and very talented.
This is a step forward in my world.
I love this song in its original form, but I am really loving this acoustic version.

A Different Easter Dinner

Hello Everyone!
Hope your Easter weekend was wonderful and full of sweet moments.

I tried to make a post from a mobile application....but had no success.
Any suggestions on apps for blogging?

I wanted to tell you about a terrific dish I came across on pinterest.
The recipe is found here, and all over pinterest. 
I had made this for my Mom and Dad when they came to visit one weekend.
They enjoyed it so much my Mom decided to forgo the usual Easter supper of turkey for this easy to make slow cooker dish. It was served and again got rave reviews. My kids like it too....and they can be picky!
 Check it out and give it a try, you won't be sorry.

Parmesan Honey Pork Roast
 Ingredients:

1 (2-3 pound) boneless pork roast
2/3 cup grated Parmesan cheese
1/2 cup honey
3 Tbsp soy sauce
2 Tbsp dried basil
2 Tbsp minced garlic
2 Tbsp olive oil
1/2 tsp salt
2 Tbsp cornstarch
1/4 cup cold water

Spray slow cooker with non-stick cooking spray. Place roast in slow cooker. In a small bowl, combine the cheese, honey, soy sauce, basil, garlic, oil and salt; pour over pork. Cover and cook on low for 6-7 hours or until a meat thermometer reads 160°.
Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Slice roast; serve with gravy (I also made mashed potatoes and the gravy was delicious on them!).

A Thought Filled Thursday: April 5th, 2012




Coffee is on....Let the day begin.

Most days requires a little coffee to get me going.
I have a few things on my list to get done before heading to the parents for Easter.
So, here I sit, enjoying my cup of joe and bracing for the day.
The sun is peeking out after last nights dump of snow....so pretty to see the glistening one last time (hopefully) before Spring truly takes hold.

Wednesday Blues


Don't feel sorry for me....really.
I feel so behind on things. Of course taking the time to make a blog post certainly isn't helping. I have so many things on my invisible list. It is invisible cause I am scared to write it all down. Fearful of the enormity of it really.
 
So I will take today to try and focus on things.
Figure out a plan of action.
Start somewhere.
Do not think about how short this week will be.

This is when I wish I was back in the mountains. I know boo hoo.
